Wild West Sourdough (WWS) is a micro-bakery, established in Galway in 2020, and operating on a small-scale production twice weekly.
All WWS loaves are free from additives, preservatives and are baked fresh on the day!
The unique blend of international flours, filtered water, boosted by taste-tingling and aroma-stimulating properties of organic seaweed from the Wild Atlantic coast, makes WWS unique.
We use a 300 year-old lievito madre (natural bread fermentation culture, used in ancient baking methods), that raises the artisan loaves to a high level compared to the mainstream equivalent. WWS artisan bread product range includes premium wheat or spelt sourdough, organic rye, khorasan (kamut), emmer or einkorn sourdough and other limited edition loaves such as eight grain or wholegrain brown loaf with malted barley & wheat grains. We also try to facilitate special requests.
Artisan loaves are baked in a variety of shapes and sizes.
Flavours offered are: plain, dillisk, caraway, omega seeds, or poppy seed coated fluffy toast. Other sourdough products, baked to order, include: sourdough waffles (incl. vegan and gluten-fee options), cinnamon swirls, cardamon buns, scones, banana loaf, brownies, cookies, brioche, challah, and sourdough crackers. Upon special dietary request, other types of sourdough can be baked (i.e. gluten free) by advance order, with at least 48 hours’ prior notice, by contacting Lucia directly.
