Lignum Restaurant

Lignum’s goal is to showcase the quality and diversity of ingredients from the wonderful people who raise, grow and produce them. The centrepiece of our kitchen is a wood-burning oven where we cook over raw flames. This allows us to give a nod to the historic food culture of our area while growing and creating something new.
Our head Chef Danny Africano is half Irish/ half Italian so there is also a strong Mediterranean influence in our seasonal menu.

On our tasting menus – From the Land, and From the Waters – you’ll meet winemakers, market gardeners, cheesemakers, vegetable growers, oyster farmers, and more. And if you’re lucky, our sommeliers will love nothing more than to sabre a special bottle at your table. Casual dining is the other luxury of choice offered as The Twelve features Pizza Dozzina and its magnificent stone oven from Vesuvius, Naples, the buzzy, award winning GastroBar known as The Pins and its very own Bakery Coffee Shop full of quirkiness and featuring fresh pastries daily.

Aniar Restaurant

Aniar is a Michelin Starred restaurant located in Galway’s West End. Our food comes from the specific place that is the west of Ireland. We hope to reveal the distinct and various foodstuffs that make up our particular landscape, through our farms, the wildlands and the shores that surround us. The natural course of the seasons dictates our ever-changing and evolving menu.

The kitchen is led by chef patron JP McMahon. Alongside using wild and foraged local ingredients, Jp likes to foster old traditional cooking and preservation methods, such as curing, pickling, smoking and fermenting. His aim is to look back in order to look forward: to the future of Irish food. It is only by understanding our culinary past that we can unlock the untapped resources of our future.

Our tasting menu is an immersive dining experience of Irish food through the ages with a contemporary filter.

Aniar also runs a Boutique Cookery School. The School offers one-day workshops as well as six-week classes. The classes run by JP McMahon offer hands-on experience.

JP McMahon is an accomplished writer with mainstream national newspapers & author.

His most recent book, An Alphabet of Aniar: Notes for a New Irish Cuisine (2023), is a reflective companion piece to his previous publication, The Irish Cook Book (Phaidon 2020).

While The Irish Cook Book focussed on the entire history of food in Ireland, An Alphabet of Aniar: Notes for a New Irish Cuisine discusses some of JP McMahon’s philosophy and findings from the last twelve years at Aniar through the framework of the alphabet.
