Wild West Sourdough (WWS) is a micro-bakery, established in Galway in 2020, and operating on a small-scale production twice weekly.
All WWS loaves are free from additives, preservatives and are baked fresh on the day!
The unique blend of international flours, filtered water, boosted by taste-tingling and aroma-stimulating properties of organic seaweed from the Wild Atlantic coast, makes WWS unique.
We use a 300 year-old lievito madre (natural bread fermentation culture, used in ancient baking methods), that raises the artisan loaves to a high level compared to the mainstream equivalent. WWS artisan bread product range includes premium wheat or spelt sourdough, organic rye, khorasan (kamut), emmer or einkorn sourdough and other limited edition loaves such as eight grain or wholegrain brown loaf with malted barley & wheat grains. We also try to facilitate special requests.
Artisan loaves are baked in a variety of shapes and sizes.
Flavours offered are: plain, dillisk, caraway, omega seeds, or poppy seed coated fluffy toast. Other sourdough products, baked to order, include: sourdough waffles (incl. vegan and gluten-fee options), cinnamon swirls, cardamon buns, scones, banana loaf, brownies, cookies, brioche, challah, and sourdough crackers. Upon special dietary request, other types of sourdough can be baked (i.e. gluten free) by advance order, with at least 48 hours’ prior notice, by contacting Lucia directly.
We are Beekeepers from Loughrea Co Galway in the west of Ireland located on the Sliabh Aughty Mountains. We are a family run business. A proud family tradition going back four generations. The land on the mountain is natural and unspoiled with lots of lush meadows, full of wild flowers and herbs, raised bog areas covered with purple heather and bog cotton, a large proportion of the mountain is now an area of conservation. The mix of farming land and rugged mountain give us a great range of flora from the peaty and limestone soil. Typical plants are pussy willow, Elderberry, Sycamore, Dandelion, Whitethorn, Chestnut, clover, Blackberry, wild herbs and Heather. The combination of the fantastic landscape and flora gives our honey a unique and pure flavour.
Our honey is 100% raw, single filtered and unpasteurized it retains all of the pollens, antibacterial and medicinal properties
We are a small award winning artisan cheese producer based in north County Galway. All our cheeses are hand made using traditional methods. All our products are pasteurised using locally sourced milk.

TamiJoy was raised up by her maternal Irish grandparents in the US. Her love for the outdoors came from toddling around with her Irish grandfather, born and raised in Ireland, where she now resides. He instilled in her an appreciation to respect the land, whatever you do, do it to the best of your ability and steady and slow always wins the race. Her grandfather was an avid gardener, and he enlightened her with the knowledge that food produced by one’s own hand is the healthiest, tastiest and should be shared with anyone and everyone that comes to the table. Then a visit to Ireland to see her grandfather’s home, that he often talked about, made her realize where she would like to live. As as fate would have it, TamiJoy and her spouse, Rocky, bought a famine stone cottage next door to the family home and restored it to a beautiful home overlooking the sea, filled with travel memorabilia and surrounded by acres of farm land.
TamiJoy learned to cook from her two grandmother’s, who taught her the basics of home cooking. And over the years, she developed her own bespoke methods using only the finest, locally sourced ingredients, including her own organically grown vegetables and fruits along with locally sourced seafood and meats. Come meet TamiJoy and experience her love of Ireland, walk the gardens, meet the farm animals and indulge your tastebuds around her farm table.
